Hack & Simon Eugene Hack from W?rtemburg and Anton Simon, from Alsace, rented the Eagle Brewery from John Ebner in 1875. Two years later they bought it and reconstructed the entire plant. In 1890 they added a refrigeration machine, built new cellars and stock houses. By 1896 they had a modern bottling plant. Their brewery, by 1900, produced 20,000 barrels of lager beer a year.
